At our Mandorlino d'Olio farm, we carefully cultivate over 8,000 olive trees , many of which are testament to centuries of history and tradition. The olives are harvested strictly by hand , following ancient Sicilian tradition, placing large natural nets under each tree to prevent the fruit from touching the ground. Immediately after harvest, the olives are taken to our mill and cold-pressed within hours , maintaining the temperature below 27Β°C . This artisanal method preserves all the nutritional properties , natural antioxidants , and the authentic aroma of fresh olives.
